Break the eggs into a bowl and beat with a whisk. Season with salt and ground black pepper.
Heat the oil in the pan and pour in the egg mixture. As the eggs begin to set, pull the uncooked egg into the middle of the pan using a wooden spoon, keep doing this until the omelette is half cooked.
Add all the tomatoes and spinach leaves onto the top of the mixture and cook for 2-3 more minutes. The eggs should be just set, the tomatoes warm and the spinach begins to soften.
Once cooked, carefully fold the omelette over. Slide onto a warmed plate and serve and enjoy your homegrown spinach in your homemade Omelette.
