Pumpkins - we recommend you carve them up for Halloween rather than eat them! But the seeds needn’t go to waste with our roasted pumpkin seed recipe.

Recipe serves 4-6 as a snack.

Ingredients

  • 1 medium sized Pumpkin
  • Rock salt (or other seasonings like garlic powder).
  • Olive Oil

Preparation method

  • Preheat the oven to 220 degrees F.
  • It's OK to leave some strings and pulp on your seeds as this adds flavor, but clean off any major chunks.
  • Mix the pumpkin seeds in a bowl with the Olive oil and salt (or seasonings of your choice).
  • Spread pumpkin seeds thinly onto a baking sheet.
  • Bake for 45 minutes, stirring occasionally, until golden brown
