November

Winter is on its way but there are still things you can grow, and this is the best time to plant Spinach.

Recipe serves 1.

Ingredients

  • Mild cooking oil spray
  • 3 medium free-range eggs
  • 2 tomatoes, cut into quarters
  • 25g baby spinach leaves, washed and drained (home grown of course!)

Preparation method

  • Break the eggs into a bowl and beat with a whisk. Season with salt and ground black pepper.
  • Heat the oil in the pan and pour in the egg mixture. As the eggs begin to set, pull the uncooked egg in to the middle of the pan using a wooden spoon, keep doing this until the omlette is half cooked.
  • Add all the tomatoes and spinach leaves onto the top of the mixture and cook for 2-3 more minutes. The eggs should be just set, the tomatoes warm and the spinach beginning to soften.
  • Once cooked, carefully fold the omelette over. Slide onto a warmed plate and serve and enjoy your home-grown spinach in your homemade Omelette.
